Cheesy Chicken Spinach Rolls
This roll is healthy, surprisingly easy to make and very tasteful. It can be an excellent appetizer as well as main dish for kids or a light dinner.
Directions
Preheat oven to 400 F.
In a rectangular bake pan arrange a sheet of parchment paper.
Pour spinach covering the entire surface.
Sprinkle mozzarella cheese evenly over the spinach.
Bake about 10 minutes, until the cheese is melted.
Let cool completely.
Spread around chicken breast slices to cover the entire surface.
Spread cream cheese over surface.
Spread red pepper pieces over surface.
Roll the whole thing up tightly, starting at one end and ending at the other.
Enclose the entire roll in plastic wrap, which will keep it rolled nice and tight.
Let sit in refrigerator overnight.
Cut in slices and serve.
Additional Notes
It can be kept in fridge up to few days and cut every time as needed.
