Heidemarie's Roasted Vegetable Medley

Roasted Veggies
 

Ingredients

1 lb. fresh mixed vegetables (carrots, onion, broccoli, squash, etc.)
2 sprigs fresh rosemary
3-6 cloves garlic
olive oil
salt
black pepper, coarsely ground
basil
2 tbsp. sugar (optional)

Aromatic roasted vegetables to prepare in a jiffy, and to enjoy lingeringly.

Directions

Wash the vegetables well, and cut into chunks or slices.
Sprinkle with salt and pepper and basil to taste.
Coarsely chop the garlic and sprinkle over the top.
Liberally sprinkle with olive oil. Sprinkle the sugar, if using.
Place the sprigs of rosemary on top.
Grill in the oven for approximately 30 minutes, turning 2 or 3 times during grilling.
Serve hot.

Additional Notes

Serve with french bread as a light lunch, or with a meat(roast or chops) and starch as a main meal.
