Veal Carpaccio: A Raw Meat Salad
This is a typical Italian meat dish, perfect for a brunch or a quick meal. It is very simple and does not require cooking. In fact, the meat is raw.
Directions
Spread the slices of meat evenly over a wide tray
Pour the oil in a cup, add the juice of half a lemon and some salt
Mix very well
Spread the oil on top of the meat (use a spoon to spread it all over)
Let it sit for 10-15 minutes
Sprinkle with plenty of roughly grated parmesan cheese just before serving
Additional Notes
If you are a bit worried about eating raw meat, here are a couple of directions to make this recipe a healthy and tasteful dish:
- The meat must be very fresh! Do not use frozen meat and do not let the meat lie in the fridge for days before making it. It must be just sliced, still pink and tasty. If it had turned a bit gray, it’s better you cook it and try a different recipe
- If you don’t like lemon, replace it with vinegar: the acidity helps making the raw meat safer and it must not be avoided.
