Classic Flour Tortillas
Flour tortillas can be used for sandwiches, burritos, soft tacos, anything. Here is a solid recipe.
Directions
Mix dry ingredients together.
Cut in shortening ( I usually use just a little bit more that 1/4 cup --too much and the texture goes off)
Add water slowly, allow dough to form and knead for 5 minutes or so.
Allow dough to rest for 15-30 minutes
Form into golf ball or small sized balls. Allow to rest another 15-30 minutes.
You could use a tortilla press, or do as I did and roll them out the old fashion way. Once rolled out, heat in electric skillet for approx 30-60 secs per side. Should get slightly brown.
I've also seen a chef demonstrate making them with an iron - he pressed them between two sheets of baking paper with a cold iron, and then cooked them with a hot iron. Haven't tried it myself, but he made it look easy.
