Tilapia with Vegetables in Chili Sauce
Ingredients
1/2 tsp red pepper flakes
1 tsp garlic powder
2 tbsp canola oil
1/4 cup of water
1 tbsp of Sriracha Hot Chili Sauce
Salt (to taste)
2 tilapia fillets
1/2 an onion (finely cut)
1/4 of a medium sized cabbage finely chopped
3-4 cups of cut frozen spinach
Optional: pasta of any kind
Dress this dish up by eating with vermicelli pasta or dress it down by eating with good ol' ramen noodles.
Directions
Begin by evenly distributing the garlic, red pepper, and salt across the tilapia fillets
Pour the canola oil into a pan. Once the oil is warm, place the tilapia fillets into the pan.
Allow the fillets to cook for 3 to 4 minutes on each side. Set stove to medium high depending on your stovetop.
Add the onions and quickly stir the onions with the fish, allowing the fish to break up into smaller pieces.
Add the finely chopped cabbage and stir. Turn down the heat to medium. Add a 1/4 of a cup of water.
Add the spinach and continue to stir. Be sure that the spinach pieces break up sufficiently.
Add the Sriracha sauce and continue to stir to make sure it’s distributed evenly.
Cover the dish and allow it to cook on medium for 5 to 10 minutes.
Additional Notes
This recipe can be adapted by substituting veggies. Also, if you would like to make it spicier just add more hot chili sauce towards the end. If you want to kick up it another notch, add more red pepper to your fish as well. Likewise, if it’s too spicy, reduce the amount of hot chili sauce, and do not use red pepper.
