Southwestern Tilapia Ranchero

Fish Ranchero with white rice
 

Ingredients

2-4 tilapia filets
1/4 onion, cresent slices
1 tomato, cubed
2 cloves of garlic, diced
1 tsp oil
1 tbsp vinegar
1/4 cup of water
salt, lemon pepper seasoning to taste

This is a simple and healthy tilapia recipe. The recipe calls for tilapia but you may use whatever fish you prefer.

Directions

Season fish filets with salt and lemon pepper
Heat pan, add oil
Add garlic, tomato, onion, and stir
Cook down for 5 minutes
Add vinegar and water, stir gently
Add additional spices if desired
Place fish fillets on top of warm salsa
On medium heat, cover and simmer fish until flakey
Depending on the type and thickness of fish cooking times will vary. Half inch fillets will steam with salsa in about 7 minutes

Additional Notes

This dish can be served on top or on the side of white or brown rice, red pepper flakes or green peppers can be added and topped with cilantro as shown on picture.
