Pan-Fried Tilapia Sandwiches

Ingredients

2 thin slices of tilapia
2 slices of sharp cheddar cheese
2 wheat rolls
4 slices of tomato
¼ of an onion (thinly sliced)
4 leaves of lettuce (of your choice)
3 Tablespoons of canola oil
1 Teaspoon of paprika
Salt (to taste)
1 Teaspoon of garlic powder

Directions

Liberally sprinkle both sides of tilapia with garlic, paprika, and a bit of salt
Pour canola oil into pan. Set stove to medium high.
Place tilapia into pan once oil is warm. Allow the tilapia to cook for 3 minutes on each side on medium.
While tilapia is cooking, slice the wheat rolls in half and place lettuce and tomatoes on one side.
When the tilapia is nearly ready, place a slice of cheese on the cooking tilapia for about a minute. Turn the burner down to low.
Remove the tilapia from the pan and place on the bed of lettuce and tomatoes.
Pour the sliced onions into pan that the fish was removed from. Turn the burner to high. Toss them around in the oil for about a minute, (add additional oil if necessary) then remove the onions from the pan and immediately place them on top of the fish.

Additional Notes

Try substituting cheddar cheese for Colby-jack for a lighter flavor. Also, if you’re not a fan of paprika it can be omitted. Give your kids the option of adding a bit of ketchup or tartar sauce.
