Portabello Mushroom Stuffing
I use this for pork crown rib roast stuffing. You'll absolutely love it and so will your dinner guests.
Directions
Heat oil in large skillet over medium heat.
Add onion, red pepper, and celery and saute for 2-3 minutes, or until vegetables are tender-crisp, stirring occasionally.
Add mushrooms and saute for 2-4 minutes or until tender.
Add broth, sage, salt, and pepper.
Remove from heat.
Add cubed bread to vegetable mixture, stirring to coat.
Cool mixture for 10 minutes.
Add eggs to stuffing mixture, stirring to combine ingredients.
You may use this mixture to stuff any type of meat. Or, place mixture in greased 2-quart casserole and bake at 350 for 30 minutes
