Greek Ground Beef and Onion Stuffed Peppers
This slow cooked stuffed pepper recipe will make a great meal. It has hints of Greek cuisine, and is perfect for a family dinner.
Directions
Sauté onion in 3 tbsp oil over medium heat for 10 minutes.
Add washed rice and cook for 5 minutes.
Combine with parsley and tomatoes paste and let cool completely.
In the meantime slice tops off of peppers, remove seeds and membranes, and rinse well.
Combine rice-onion mix with meat. Add oregano, salt and pepper to taste.
Stuff peppers with the mixture and place in slow cooker.
Pour 2 cups of water, cover and cook on low for 7 to 9 hours, or on high 4 hours.
Serve hot with 1 tbsp sour cream with each pepper.
Additional Notes
Try to replace white rice with wild rice and increase cooking time accordingly.
