Beth's Sirloin Beef Stroganoff

Beef Stroganoff
 

Ingredients

3-4 pounds sirloin or other beef roast
1 onion, chopped
2 cans beef broth
1 can cream of mushroom soup
8 oz. sliced mushrooms
8-12 ounces sour cream
3 tbsp. ketchup

This is a dish that my family has been making for over 30 years, and it's still a favorite!

Directions

Flour the roast and brown all sides in butter
Place roast and onion in large casserole dish
Pour beef stock over all
Cover and bake at 350 degrees for 2 1/2 to 3 hours until beef is tender
Remove from oven and add mushrooms, mushroom soup, ketchup, and sour cream. Stir well.
Return to oven and bake for 30 minutes at 250 degrees
Serve over rice or noodles
