Italian Sausage Bean Stew
Beans and sausages go great together. The flavors are complementary and not overpowering. You can use red, white, or black beans or even a combination.
Directions
Soak the beans overnight in water.
Drain off the soaking water. Boil beans in water changing water twice, after every 10 minutes.
Simmer beans about 45 minutes. Add carrots and simmer for another 15 minutes or until are soft. Drain well.
Fry sausages in oil until turn golden brown, about 10 minutes in a large saucepan over medium-high heat.
Take them out and cut in 1/2 inch round slices.
Sauté onion and red pepper.
Add the beans, carrots and sausages. Cook for 5 minutes, stir frequently.
Add tomato paste and stir well.
Add salt and pepper to taste.
Serve with pickles and fresh bread.
Additional Notes
You can substitute the sausage with cubed turkey, chicken, ham or beef.
