Chicken Stew with Zucchini and Vegetables

Chicken Zucchini Stew
 

Ingredients

1 lb boneless chicken thighs, cut in small pieces
5 zucchini, peeled and chopped
1 onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
3 tomatoes, chopped
1/2 tsp dried oregano
2 bay leaves
3 tbsp oil
salt and paper to taste

This is a family favorite for busy evenings when you want comfort food, but don't have all day to simmer it. Serve by itself or with mashed potatoes.

Directions

Cook chicken with oil in a large pot over medium heat until browned on all sides.
Add all ingredients and stir well.
Simmer 45 minutes over medium-low heat, stirring from time to time.
If the stew becomes too thick, stir in a little water to reach the desired consistency.

Additional Notes

Leave out the chicken for a tasty vegetarian dish.
