Apple Stuffed Eggplant Squash
 

Ingredients

2 acorn squash cleaned and sliced in half, seeds removed
4 gala apples peeled and sliced
1 tbsp brown sugar
1 tbsp butter
1 cup chopped pecans
1 tsp nutmeg
1/2 cup white grape juice

This recipe is a low calorie alternative to apple pie.

Directions

In a 9x13 baking dish, place the acorn squash upside down
Add enough water to create moisture while cooking
Bake for 30-45 minutes at 350 degrees
Meanwhile in a skillet, cook the apples, brown sugar, nutmeg, butter over medium heat until the apples are tender, set aside
Once the squash is done baking, remove water from the dish, flip over the squash
Add the apple mixture and serve

Additional Notes

For a finishing touch, you may sprinkle a scad amount of cinnamon.
