Savory Spanish Rice and Seafood

Ingredients

1 cup long-grain white rice
2 cups nonfat chicken broth
3/4 cup diced onion
1 cup diced fresh tomato
1 tsp garlic powder
1/4 tsp cayenne pepper
1 tsp black pepper
Pinch turmeric of saffron
1/2 lb cod, cut into 1-inch chunks
1/2 lb sea scallops, cleaned
1/2 lb medium raw shrimp, shelled and tails removed
10-oz pkg frozen peas, thawed and drained.

This is a crock pot recipe that you can prepare in advance and eat later. The seafood and Spanish rice will be a guaranteed crowd pleaser!

Directions

Combine rice, chicken broth, onion, tomato, garlic powder, cayenne pepper, black pepper, and turmeric or saffron in slow cooker and mix well.
Cook on high 2 to 3 hours.
Add fish pieces, scallops, shrimp, and peas; cook on High 1 hour.
