Italian Sour Soup With Meatballs
This is a really delicious soup with hints of Italian and Russian. Make it once and you will prepare it over and over again!
Directions
Stir in cold water diced onions, diced carrots, diced potatoes, diced parsnip, chopped celery sticks, and chopped red pepper.
Bring to a boil over medium high heat.
Reduce heat to low. Cover stockpot and simmer 15 minutes.
Meanwhile, combine an egg with ground turkey, uncooked white rice, salt and pepper.
Roll by hand to the ping pong ball size making all the meatballs. Drop them in the pot.
Cover and simmer until meatballs are tender, stirring occasionally, about 20 minutes.
Add tomato paste, parsley and lovage, simmer 2 more minutes.
Season to taste with salt, pepper and lemon juice.
Additional Notes
Serve in bowls with sour cream and pickled hot peppers aside.
