Jalapeno Tequila Shrimp

Takes about 10 min. prep time. Guests will be in awe of final product. You can use in Salads,Kabobs, or just eat with toothpick. SPICY!!
Ingredients
  • 2 1/2 lbs shelled, deveined uncooked Jumbo shrimp
  • Marinade:
  • 2 cups coarsely chopped cilantro
  • 4-6 jalapeno chiles
  • 1/2 small onion chopped coarsely
  • 3 garlic cloves, chopped
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 2 Tbsp. Tequila
  • 1 tsp. salt
  • 1/2 tsp. sugar
  • 1/2 tsp. ground pepper
  • Garnish:
  • 2 limes cut into wedges
Directions
  1. Thread Shrimp onto 6 (10-12 inch) metal or bamboo skewers.Arrange kabobs in shallow baking dish.
  2. In food processor, combine cilantro, chiles, onion and garlic cloves, finely chop. Gradually add all remaining marinade ingredients, processing until you have a green paste. Pour over shrimp and marinate for 45 minutes in refrigerator.
  3. Melt butter over medium heat. Add garlic cloves and 3 Tbsp. cilantro. Cook until garlic softens.
  4. When you are ready to serve heat or grill. Drain and heat or grill for 3 to 4 min. on each side until shrimp turn pink. Baste with the cilantro-garlic butter. Garnish with lime Wedges and pieces of Parsley.
