Seafood Kebabs With Sizzle
Ingredients
1/2 lb sea scallops
1/2 lb large shrimp, peeled and deveined
3/4 cup garlic-lemon marinade
1 large sweet onion, cut into large chunks
1 cup fresh pineapple chunks
This is a seafood recipe that incorporates scallops, shrimp, veggies, and more into delicious kebabs.
Directions
Rinse scallops and pat dry; cut extra large scallops in half.
Combine scallops and shrimp in a large resealable plastic bag; pour marinade into bag and shake until well coated.
Refrigerate 30 to 45 minutes.
Spray grill with cooking spray and preheat 5 minutes.
Remove scallops and shrimp from marinade, discard marinade; alternately thread scallops, onion, shrimp, and pineapple on 6-inch skewers (if using wooden skewers, soak in water 30 minutes).
Place kebabs on grill and cook 3 to 4 minutes, until scallops are opaque and shrimp is pink and curled.
Serve over cooked rice or couscous.
