Delicate Salmon Topped with Mayonnaise
First time I tasted it was at a Christmas dinner and I was fascinated by its simplicity and versatility: it really can fit every occasion!
Directions
To prepare the mayonnaise: pour the oil in a big glass with high walls
Add the egg, the vinegar (or lemon juice) and a pinch of salt
Mix with a hand-held mixer following the procedure below:
Immerse the mixer, switch it on, mix while lifting and lowering the mixer into the mayonnaise several times, until it becomes creamy and homogeneous
To prepare the salmon: pour the salmon slices into a pot full of water
Add all spices, herbs, wine and lemon slices
Bring to boil and cook for 15 minutes
Let the salmon rest in the pot for 10 minutes
Take it out and cool in the fridge
Before serving, decorate the salmon with abundant mayonnaise
Additional Notes
Suggestions for making it simpler: do not get crazy about the spices and herbs I mentioned: they are just an indication. You can use also other spices, as you please.
A home-made mayonnaise prepared with a few natural ingredients is much more tasty and healthy than a pre-made one, but of course a packed one can be used, as well.
People are normally scared about preparing a mayonnaise because sometimes it go wrong, but if you want to try the challenge, I’m giving you the traditional solutions to the problems that may occur:
-if the mayonnaise is too liquid, add some more oil and mix well
-if the mayonnaise does not get creamy and the eggs remains separated from the oil, there’s nothing you can do! You must re-start from the beginning with new ingredients in a different glass: when the second mayonnaise is made, you can incorporate the ingredients from the first one, slowly, while mixing. Then you will get a mayonnaise… just double the quantity!
