Vegetarian Salad With Fresh Fruit
Ingredients
2 cups shredded lettuce
1 apple, peeled, cored and diced
1 carrot, finely grated
1 banana
1/3 cup crumbled riccotta cheese (or your favorite strong cheese)
2 tbsp. mixed nuts, slightly chopped
2 tbsp. raisins
2 tbsp. dates, chopped
2 tbsp. mixed seeds (sunflower, sesame, pumpkin etc)
French salad dressing
This is a delicious, fruity salad, perfect for vegetarians, and perfect for those that aren't. Serve as a side dish, or as a light meal on its own.
Directions
Prepare and chop all the ingredients.
Mix together in a salad bowl. Top with salad dressing.
Serve with thick slices of French bread.
Additional Notes
Use a delicious blue cheese dressing for additional cheesy flavor.
