Broccoli, Cauliflower and Bacon Salad
 

Ingredients

1 head broccoli (appx 8 oz)
1 head cauliflower (appx 8 oz)
8 oz bacon
1 onion, sliced
4-5 green lettuce leaves
vinaigrette dressing

A wonderfully unique cold salad for those hot, lazy summer days. Serve as an accompaniment to any meal, or on its own as a light meal.

Directions

Cut the broccoli and cauliflower into small chunks.
Steam the broccoli and cauliflower for 5 minutes.
Place the cauliflower and brocolli into a steaming pot, add a bit off water in the bottom of the pot, and bring to the boil. Simmer for 5 minutes to steam the vegetables.
If you do not have a steaming pot, place a small heat-proof dish in the bottom of the pot. Place a sieve into the pot to sit on the little dish, and use this as a steamer. The vegetables must not lie in the water.
Drain broccoli and cauliflower, rinse in ice cold water, and drain again.
Dice the bacon. Fry the bacon and onion on the stove until crisp. Let cool.
Shred the lettuce leaves.
Arrange all the ingredients in a serving dish.
Liberally drizzle a vinegarette dressing over the top.

Additional Notes

Alternate serving ideas: For a broccoli salad, double up on the broccoli, and leave out the cauliflower. Leave off the vinaigrette dressing, and serve with a generous dollop of mayonnaise.
