Chicken and Mushroom Rigatoni

Ingredients

4 tbsp. butter
2 tbsp. olive oil
8 oz. mushrooms, sliced
4 grilled chicken breasts, chopped
2 tsp. basil or 10 basil leaves, finely chopped
Salt and pepper to taste
1 large onion, chopped and caramelized
6 garlic cloves, chopped
10 oz. marsala wine
2 1/2 cups heavy cream or half and half
24 oz. rigatoni, pre-cooked or cooked as you are cooking the sauce
6 oz. freshly grated parmesan cheese

This recipe is similar to what a lot of Italian restaurants serve. Leave out the chicken for a yummy vegetarian dish.

Directions

In a large skillet, heat oil and butter and add mushrooms, chicken, basil, onions, garlic, salt, and pepper and saute for 4-6 minutes
Add the wine and saute for 2 minutes.
Add the cream and bring to a boil.
Add cooked pasta and stir until all the pasta is covered with sauce.
Add parmesan cheese and stir until cheese is melted.
