Afghani Sweet and Savoury Rice
Ingredients
1 tablespoon butter
1 carrot, peeled and finely diced
1 smallish onion, sliced
1 cup basmati rice, rinsed
1 1/2 cups water
3-4 tablespoons ground cumin
1 tablespoon ground coriander
1/2 teaspoon crushed red pepper flakes (optional)
1/4 cup dried raisins
1/4 cup dried cranberries
1/4 cup dried cranberries
An this rice recipe will make an awesome side for any spicy meal. Give it a try and you will not be disappointed!
Directions
Melt the butter in a medium sized saucepan over medium heat. Add the onion & carrot and cook until caramelized, stirring frequently.
Add the remaining ingredients & bring to a boil.
Stir the rice once and cover the pot with tin foil or a tight fitting lid. Turn the heat down as low as possible & cook for 20 minutes.
Remove from heat and let stand 5 minutes.
Serve immediately
Additional Notes
Oh, there’s a lot of cumin in this dish. But strangely enough, this dish isn’t all about the cumin. Its about the contrast between the pungency of the cumin, the aroma of the onion, and the bright bites of sweetness from the raisins. A great side dish with most middle eastern & subcontinental cuisine, with some pistachios thrown in and a little chicken on top, it makes a great meal in and of itself.
