Chocolate Peanut Butter Rice Krispie Treats
Ingredients
1 cup sugar
1 cup light corn syrup
1 cup peanut butter
8 cups puffed rice cereal
1 cup semi-sweet chocolate chips
Try these Rice Krispie Treats for a lunch-time snack that doesn't mess around. Goes great with a tall glass of milk.
Directions
Combine the sugar, syrup & peanut butter in a large pot.
Bring to a boil over medium-low heat, stirring constantly (be patient).
Boil for 1-2 minutes at most then quickly stir in the cereal, tossing to coat evenly.
Spread in a greased 9"-by-13" pan & top with chocolate chips. Once melted, spread chocolate over the top of the treats.
Cool completely, cut & serve.
Additional Notes
These aren’t those wimpy krispie treats everyone knows. These treats mean business. They’re heavy, they’re dense, they’re chewy, and they’re seductively rich. They’re almost like little bars of gold, in as much as you’ll probably end up hiding & hoarding them. Essentially what you’re doing is replacing those wimpy marshmallows with some mean peanut butter toffee and topping them with chocolate. And it partially explains how I got fat.
It is absolutely essentially that these cool completely before eating, otherwise the flavour doesn’t even begin to approach its full potential. Essentially they’re the best the day after you make them, so make them at night & they’ll be waiting in a state of perfection the next morning.
