Stewed Rabbit with Tomatoes
Sick of the usual chicken and turkey meat? Try the tasty, light and easy-to-cook rabbit meat! Even your children will love it!
Directions
Pour the oil and butter in a large pot and let they mildly fry, keeping the temperature high
Add the onion cut into slices and let it become golden
Add the rabbit meat and stir it at intervals: the entire surface of each piece must stay in contact with the frying oil until it turns from pink to light-brown
Add stock cube (or salt), some rosemary and 2-3 bay leaves
When the surface of all meat pieces is brownish, pour the wine, let evaporate and reduce the temperature to a minimum
Stir well and cover the pot
Cook for 15 minutes, checking at intervals that the meat does not stick to the bottom of the pot
Add tomato sauce or the 2 peeled tomatoes
Cook for other 15 minutes, checking now and then
Additional Notes
Unlike hare, whose taste is made sharp by being generally a wild animal, rabbits usually come from farms. Their meat has thus a delicate taste that it's better not to cover with too many flavors: the simplicity of this recipe will enhance its natural savor, though making it suitable also for an important dinner.
