Classic Chicken Quesadillas
Another chicken dish? Oh well, chicken is cheap and good for you. So keep it interesting. Try another recipe for chicken.
Directions
Finely chop the onion and set aside.
Sharpen a large knife to that you can very thinly slice the chicken breasts. Slice so that you get approximately 48 to 50 pieces of chicken breast.
Melt the margarine in a large saute pan. Add the onion and garlic and cook on medium heat until onion is soft.
Add the sliced chicken and cook on medium heat for 15-20 minutes, until completely cooked through.
Salt to taste.
While the chicken is cooking, roughly chop the black olives and slice the remaining onion. Set aside.
Once the chicken is done, remove from the heat and drain any liquid.
Arrange the chicken, tortillas, olives and onions on a flat work space.
Heat a skillet on medium heat. Spread some oil on the skillet as it heats.
Lay out a couple of tortillas. Sprinkle some mozzarella on half of each tortilla.
Arrange 4-5 slices of chicken on cheese of each tortilla.
Put some olives and onions on the chicken and sprinkle a little more cheese over all of it.
Fold each tortilla in half.
Place both quesadillas on the skillet.
Cook quesadilla for approximately 3-4 minutes, until the tortilla is lightly browned.
Turn quesadilla over and cook the other side for 3-4 minutes, until the tortilla is lightly browned.
Continue to make and cook quesadillas until tortillas and chicken are used up.
Cut quesadillas into halves and serve with cold sour cream, salsa and guacamole.
Additional Notes
Quesadillas are nice and compact for kids' small fingers and hands. Almost like a pizza but no messy sauce. Let your kids decide what to put on their quesadilla, but I suggest that this is one recipe that you build on your own. These can get messy moving to the skillet and small hands can get in the way and possibly burnt. Cook a bunch of extra quesadillas and put in small plastic bags for lunch buckets or after school snacks. Eaten cold or reheated, these are a great way to serve chicken----again.
A quick way to make guacamole is to slice one or two avocados in half. Scope out the avocado from each half into a bowl. Mash the avocado with a fork until smooth. Add as much prepared salsa as you like for taste and mix well. Serve immediately.
