Loaded Baked Potato Soup
Ingredients
Peel, clean, and cube 6-8 baking potatoes
3 cups of water
1 clove of garlic chopped finely
One carrrot
1 celery stick
Salt and Pepper to taste
1 tbsp of bacon bits
1/4 cup sour cream
1/4 cup of shredded cheddar cheese
1/4 cup heavy whipping cream
1/2 cup instant mashed potatoes
Half a package of cream cheese any brand
You'll love this loaded baked potato in a bowl of soup!
Directions
Boil the ingredients except the cheese, sour cream, whipping cream, and cream cheese until potaotes are fully cooked
Add the rest of the ingredients just before the soup is done
Serve with shredded cheese on top sprinkled with bacon bits
For a little extra flavor, you may add a couple of chicken flavored boullion cubes to the water and potato mixture when it is boiling
Additional Notes
The instant mashed potatoes and whipping cream serve to thicken the soup. Thicken to suit your taste buds.
