German Potatoes Salad
 

Ingredients

2 lb. red potatoes
1 tbsp. mayonnaise
5 tbsp. apple cider vinegar
8 tbsp. red onion, chopped
salt and pepper to taste
1 tbsp. mustard
1/4 lb. bacon, uncooked

This recipe duplicates that delicious potato salad you can usually only get in German restaurants. I loved it and it goes well with almost anything.

Directions

Boil the potatoes about 20-25 minutes. Let cool 10 minutes and peel.
Cook the bacon until crisp.
Make a dressing with mayonnaise, vinegar, mustard, salt and pepper.
Chop potatoes and bacon.
Combine with chopped red onion.
Pour the dressing and serve right away.
