Greek Style Potato Salad
This is an excellent potato salad, my family loved it. It is Greek in origin, easy to make, and tasty to eat.
Directions
Bring a large pot of salted water to a boil.
Add potatoes and cook until tender.
Drain, cool and chop potatoes.
Peel off egg shells, separate from yolks, and chop whites.
Make a dressing with mashed yolks, vinegar, mustard and oil, seasoning with salt and pepper. Mix well.
Combine potatoes, whites, onion, olives, peppers and pickles.
Pour the dressing, stir, decorate with fresh parsley and serve.
