French Mixed Potato Salad with Ham
The best thing about this salad is that you don't need exact amounts for each ingredient and it will still taste great. This dish has French roots.
Ingredients
- 1/2 lb ham
- 1 lb potatoes
- 1/2 celery root
- 3-4 carrots
- 2-3 parsnips
- 1 can sweet peas
- 4 dill pickles
- 1/4 cup mayonnaise
- 2 tsp mustard
- salt and pepper to taste
Directions
- Boil potatoes, celery, carrots, and parsnips for 20 minutes, until vegetables are tender.
- Peel and cube them.
- Cut ham, pickles, roasted red peppers in small cubes, too.
- Put everything in a bowl with mustard, mayonnaise and salt. Mix together.
Additional Notes
You can turn this into a vegetarian meal by removing ham.
For a light version replace 1/4 cup mayonnaise
with just 2 tbsp mayonnaise and 2 tbsp yogurt.
