Old Fashioned Pot Roast
Ingredients
3 pounds chuck roast
Salt and pepper
1 teaspoon of cumin
1 teaspoon of chili powder
1 large sweet onion, peeled and quartered
4 medium carrots, peeled and quartered
2 medium parsnips, peeled and quartered
1 medium sweet potato, peeled and cut into bite sized pieces
3 cloves of garlic, peeled and minced
1 cup of water or beef broth
A Sunday supper favorite designed for a week night feast.
Directions
In a shallow dish blend together the salt, pepper, cumin and chili powder. Season your roast with salt mixture, massaging spice mix into meat.
Place seasoned roast and all other ingredients into slow cooker, cover well and cook on low 8 - 10 hours.
Remove roast to rest 5 to 10 minutes prior to serving.
Cooking broth makes ideal pan gravy. Serve roast with cooking vegetables hot.
Additional Notes
This is a modern twist on an old fashion comfort food. Easy to make in your slow cooker the inexpensive cut of beef will fall apart on your plate. Whip some potatoes and sit down to a feast.
