Roasted Red Pepper and Feta Salad
This is a yummy salad with Greek origin. It is so easy to make and so tasty!
Directions
Roast peppers at 425 F in the oven turning frequently until skins are blistered.
Add 2 tbsp salt and let cool one hour in a cover cook pot.
Remove skins and seeds under running water.
Cut peppers in strips.
Whisk with salt to taste, oil, vinegar, herbs and feta.
Arrange on a plate and serve right away.
Additional Notes
Try to use yellow, green and red peppers for more color. If you like garlic you can add a teaspoon of minced garlic for a great side dish.
