Garden Fresh Pepper Steak

A simple and colorful combination of savory and sweet.
Ingredients
  • 2 Tablespoons peanut oil
  • 2 pounds sirloin tip steak, cut into 1/8 x 2-inch strips
  • 1/8 teaspoon garlic powder
  • 1/2 cup onion chopped
  • 2 - 3 sweet bell peppers, seeded, cut into julienne strips
  • 2 cups fresh or canned tomato, quartered and seeded
  • 1 beef bouillon cube, crushed
  • 1 Tablespoon cornstarch
  • 1/4 cup water
  • 3 Tablespoons soy sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste
Directions
  1. Have all ingredients ready before starting. In a small bowl, whisk together water, cornstarch, soy sauce and sugar.
  2. Season beef strips well with salt, pepper and garlic powder.
  3. Heat wok on high heat and add peanut oil. Bring wok to just below smoking hot - quickly stir in meat strips - toss to brown on all side and then remove meat.
  4. Add onion and sweet pepper to the wok and saute for 2 minutes. Return meat along with tomatoes, and bouillon cube; toss to heat all ingredients evenly.
  5. Add cornstarch mixture into wok and stir constantly, until thickened. Cook an additional 2 minutes and serve hot.
Additional Notes
An old fashion recipe with a new fresh twist, a quick trip in a hot wok brings together the earthiness of the beef and the citrus like pop of the fresh sweet peppers. Add some color by using orange and red sweet peppers along with the traditional green, serve over hot steamed rice to complete the meal.
