Creamy Pea Soup With Dumplings
This pea soup recipe is a family favorite for those cold winter evenings. It is slightly sweet, and very creamy.
Ingredients
- Soup:
- 1 lb peas - fresh or frozen
- 4-6 cups water
- 1 tsp. salt
- 1/4 cup sugar (or to taste)
- Dumplings:
- 1 tbsp. butter
- 1 1/4 cup cold water
- 1 cup flour
- 1/2 teaspoon salt
- 1 egg
Directions
- Soup:
- Bring the peas to a boil in the water. Start with 4 cups of water, and add more as neccessary.
- Add the salt and sugar.
- Simmer for 15-20 minutes, until tender, but not mushy.
- Dumplings:
- While the peas are boiling, follow these steps to begin preparing the dumplings.
- Melt the butter in a heavy saucepan, and add the water and salt.
- As soon as the water comes to the boil, remove from heat.
- Add the flour, stirring well to mix all the flour in the water, with no lumps.
- Replace on the stove over very low heat.
- Make a well in the flour mixture, and crack the egg inside of it.
- Beat well until the dumpling mixture is glossy.
- Switch off the heat, but leave the mix in the pot for a few minutes.
- Once the peas are nearly done, place spoonfuls of the dumpling mixture into the soup.
- Cover the pot, and allow the dumplings to steam for 5 more minutes.
- Serve.
Additional Notes
This soup is also delicious served cold on a hot day.
