Sweet Cottage Cheese Pastries

Ingredients

2 1/2 cups flour
1 cup warm milk
20 tbsp sugar
5 eggs
2 tbsp vanilla extract
8 tbsp melted butter
1 lb pressed cottage cheese
3 tbsp golden raisins
1 tbsp semolina
1/2 tsp salt
1/4 cup powdered sugar

At first, this recipe may seem complicated to make. But when you will see how greatly the pastries are received you will agree that it's worth the effort.

Directions

Combine flour, salt, yeast, milk, oil, butter, 10 tbsp sugar, 1 tbsp vanilla extract and 2 beaten eggs in a large bowl. The result will be soft dough.
Let rise for one hour in a warm place.
In the meantime prepare the filling: In a bowl mix cottage cheese, 10 tbsp sugar, 1 tbsp vanilla extract, 1 tbsp semolina and 2 eggs. Add raisins.
Unroll a thin sheet of dough, and cut in squares with 6" sides. Put filing on each square; stick the opposites corners, pressing with fingers, without letting the filing go out.
Oil a baking pan. Arrange the pastries and let rise for more 20 minutes.
Lightly brush each pastry with beaten egg.
Preheat oven to 350 F. Bake about 35 minutes, until golden brown.
Top them off with powdered sugar and serve them hot.
