Pasta with Shrimp and Zucchini

Ingredients

1 lb pasta
1 lb shrimp
2 zucchini (in total about 1/2 lb.)
1 tbsp white wine
1 teaspoon curry
1 teaspoon dried mint leaves
1/2 cream
2 tbsp oil

How many different pasta recipes exist in Italy? They must be thousands, just because every cooking wife invents her own versions. Here is mine.

Directions

Put the shrimps in a large pan and roast them for 3-4 minutes
Pour the white wine on the shrimps and keep cooking for other 5 minutes
In the meantime, cut the zucchini in small slices
Take out the shrimps from the pan, let them cool a bit and remove the shell
Pour the oil in the pan and heat it
When the oil is very hot, pour the zucchini in it and roast them for 5 minutes
Add the shelled shrimps, the curry, the mint, some salt and the cream, and stir well
Fill a large pot with water and bring to boil
Add 1 1/2 teaspoons salt
When the water boils, add the pasta and cook for the time indicated on the pack
Drain the pasta, add the sauce and stir well
Serve hot and enjoy with white wine

Additional Notes

The typical image of pasta always shows it sprinkled with grated parmesan cheese, but in reality there are some cases where parmesan is “forbidden”. The rule is, no parmesan when the sauce is fish-based.
