Elena's Fresh Octopus Medley

Ingredients

2 lb. small octopuses
1 tbsp. white wine
1/2 lb. peeled tomatoes
1/2 lb. canned peas
2 cloves of garlic
Chilli powder or paprika
1/2 cup olive oil

Give a thrill to your habits by cooking this unusual but delicious sea recipe! It's easier than you think!

Directions

Wash the octopuses under running water and drain them well
Pour the oil in a big pot with high walls
Add the garlic, cut in half
Add the octopuses and stir well
Add the white wine, let evaporate and stir
Set a very low temperature, cover and cook for 30 minutes (check and stir now and then)
Remove the water originated from the cooking
Add the peas, the peeled tomatoes and sprinkle with paprika
Add salt only if necessary (octopuses are naturally salted)
Cook for other 15 minutes
Ready to be served very hot accompanied by a fresh white wine!

Additional Notes

If you can’t find small octopuses, you can use a single big one (cut in pieces) or other similar animals like calamari (squids) or cuttlefishes. Beware: whichever you use, they have the bad habit of shrinking while cooking, therefore don’t be afraid of the big initial quantity. This recipe it’s excellent also the day after: you can store it in the fridge and just warm it when you need it
