Sea Scented Stewed Mussels

Ingredients

2 lb. mussels (Mytilus edulis)
1/4 cup white wine
10 oz tomato sauce
3 pinches of oregano
5 basil leaves
5 chopped parsley leaves
Paprika powder
1 garlic clove
elenagissi
Perhaps you tasted mussels in a restaurant facing the ocean and thought you could never make them. Wrong! Enjoy the same atmosphere with this easy recipe!

Directions

Clean mussels' shells by scrubbing each of them with a sponge or brush
Discard mussels with broken shells and loose mussels (without shell)
Cut the mussels' "tuft" with scissors
Put mussels in a large pot, cover and cook them at medium temperature for 7-8 minutes
Drain away the water from the pot
Stir, add wine and let it evaporate
Salt is generally not needed because mussels are naturally salted, but you can add some, if you prefer
Stir well and cook for further 5 minutes or until all shells are open
Serve the mussels still in their shells, with some of the juice that originated from the cooking.
Enjoy them drinking dry white wine

Additional Notes

Additional info: make sure you buy FRESH mussels and cook them the same day! The cleaning part might require some patience, but you can involve your children or friends in the scrubbing operation and turn a boring job into a socializing occasion!
