Autumn Mushroom Salad
Autumn! The first mushrooms appear in the market stalls. Just the right time of the year to still enjoy a fresh summer salad with this excellent ingredient
Directions
Wash carefully the mushrooms and remove the bottom of the trunks
Cut them in very thin slices with a potato-peeler
Add the lemon juice and stir well
Add salt, the minced parsley and the olive oil and stir
Roughly grate parmesan cheese with a wide-holes grater or a knife
Serve the mushrooms enriching them with a shower of grated parmesan
Additional Notes
Make sure your mushrooms are really fresh: when cut, they must not be dark inside. Sprinkle with lemon juice immediately, to avoid the mushrooms to oxidize and get brownish.
