Homemade Chalupas With Pork

Ingredients

2 1/2 lb pork roast
2 1/2 lb pinto beans (dried)
2 tbsp chili powder
1 tsp oregano
2-4 jalapeno peppers (depending on how hot you want it)
4 cloves garlic, finely chopped
2-3 tsp cumin
1 tbsp salt
Served on the side: shredded cheese, avocados, tomatoes, lettuce, onions

This is a pork recipe with a Latin flair. It's one of my family's favorite dishes!

Directions

Soak beans overnight; drain
Cook beans and roast in heavy pan, add chili powder, oregano, jalapenos, garlic, cumin, and salt; cover with water
Cook about 4 hours until roast falls apart
Remove bone; add water if too thick
Serve over Fritos corn chips
Serve with shredded cheese, chopped avocados, chopped tomatoes, chopped lettuce, and chopped onions
