Butternut Meatloaf Bake
A brilliant combination of butternut squash and meatloaf, without the additional fuss of too many dishes to wash!
Directions
Preheat oven to 360 F.
Cut the butternuts in half legthwise. Scoop out seeds, and a bit extra flesh if the seed-opening is too small.
Place a teaspoonful of butter into the opening in each butternut piece.
In a large bowl, mix together the remaining ingredients.
Form the meatloaf mixture into four balls, and place inside the butternuts. It may stand up over the level of the butternut.
Place in an ovenproof casserole dish. Cover with foil or an ovenproof lid.
Bake for 40 minutes to 1 hour (depending on the size of the butternuts), till the butternuts are tender.
Remove the lid / foil, and grill open for a few minutes to brown the meat.
Serve with savoury rice and salads.
Additional Notes
If the butternuts are small, and you have remaining meatloaf mixture, which just does not fit in the butternuts, form a miniature meatloaf, and bake it alongside the butternuts at the same time, for a wonderful sandwich filling.
