Hearty Meatballs and Gravy
This recipe is a new twist for the classic meatball. Great for dinner, or just as a snack.
Ingredients
- 1 pound ground chuck
- 1 egg, beaten
- 1/2 cup Italian flavored bread crumbs
- Salt and pepper
- 2 cups beef broth
- 1 can cream of mushroom soup
- 1 pound bag of wide egg noodles, cooked to package direction
- 2 Tablespoons butter
- 1 pound baby green beans, steamed tender
Directions
- Mix meat, egg, bread crumbs, salt and pepper. Form small meatballs about the size of a ping-pong ball.
- In large skillet heat beef broth, soup to a boil, add meat ball, cover, reduce heat and simmer 30 minutes.
- Prepare noodles according to package directions. Drain, add butter, and keep hot.
- Steam green bean until just tender.
- Serve on large platter; place noodles down to form a nest, spoon meatballs and gravy overtop. Arrange steamed green beans around outside edge.
Additional Notes
A lot of little meatballs cooked slowly in rich beef gravy. Served on a steaming bed of buttered noodles; surrounded with a ring of tender steamed young green beans.
