Sweet and Crunchy Coconut Macaroons
Ingredients
3 egg whites
1 cup sugar
1 tbsp cornstarch
1/4 tsp cream of tartar
1 tsp vanilla
1 package fine coconut (or put flake coconut in a food processor and process until fine)
Try this delicious macaroon recipe for a sweet treat at any time of the day!
Directions
Preheat oven to 300 degrees.
Heat egg whites and sugar in a double boiler until hot to touch.
Add the rest of the ingredients and remove from the heat.
Drop by large spoonfuls onto cookie sheet.
Bake at 300 degrees for 15 minutes or until edges are brown.
Cool on racks.

The macaroon recipe evolved out a number of other recipes. My husband wanted a coconut macaroon cookie but didn't like any of the recipes that I found. He had a specific taste and look for the cookie. So after a number of tries, I finally came up with this cookie. These are quick and easy to make. Don't let not having a double boiler deter you from making these cookies. An easy double boiler is in your pots and pans closet. Just take a large pot and fill it half way with water. Then take a smaller saute pan or pot and place it inside the large pot. Voila - double boiler.
