Sweet And Sour Lentil Soup

Lentil Soup
 

Ingredients

1 lb. black lentils, washed
2 large potatoes
2-4 large carrots
2 onions
1/2 lb, bacon
1/2-1 cup vinegar
1/2-1 cup sugar
Water
Salt and pepper to taste

A delicious lentil soup soup recipe with a tantalizing sweet and sour combination.

Directions

In a large pot, bring the lentils to the boil, with enough water to cover. add more water as needed.
Add the salt, pepper. Simmer till the lentils are half cooked. Approximately 40 minutes.
In a saucepan, fry the diced onions and diced bacon till nicely browned. Drain any oil, and add to the lentils.
Dice the potatoes and carrots, and add to the lentils.
Add the sugar and vinegar. Start with 1/2 cup of each, and add more to taste.
Continue to simmer the soup until the lentils and vegetables are tender, but not mushy.
Allow to cool for 10 minutes, and serve.

Additional Notes

Replace the bacon with any smoked pork - shank, ribs etc. This is a good way of using up left over smoked pork, or the bits left on the bone after cooking another meal. THis soup is also delicious served cold.
