Lentil soup with spinach and onions
 

Ingredients

1/2 cup split pigeon peas or lentils
1/2 cup chopped spinach
1/3 cup chopped onion
3 tsp tamarind paste or lime juice
1 tsp salt or as needed
2 tsp butter
1 tsp crushed peppers (optional)

This South Asian soup recipe is made with lentils and spinach. It is rich in protein and iron. Can be served with warm bread or by itself.

Directions

Cook the lentils, spinach and onions together in about 4 cups water until the lentils turn soft.
A pressure cooker/slow cooker may be used.
Add the salt and tamarind paste/lime juice, bring to boil.
Add the butter.
Add crushed peppers if you want your soup to be spicy.
Serve hot.
