Lasagna with Cheddar and Bacon

Cheese & Bacon Lasagna
 

Ingredients

1 medium onion, finely chopped
2 tbsp. olive oil
1 clove garlic, finely chopped
10 oz. smoked back bacon, rougly chopped
12 oz. can of tomatoes
1 tsp. dried oregano
1 tsp. dried basil
1 tbsp. tomato paste
15 basil leaves, roughly torn
10 oz. lasagna sheets
7 oz. grated cheddar cheese
2 oz. grated parmesan cheese

This is a classic lasagna recipe with a cheesy bacon twist.

Directions

Sweat the onion in the olive oil over a low heat for five minutes, adding the garlic towards the end of the cooking time.
Next add the bacon. Stir frequently until cooked through.
Add tomatoes, the tomato paste and the dried herbs. Cook for a further ten minutes before adding the fresh basil.
Wipe the bottom of an ovenproof dish with olive oil and place 3 alternating layers of lasagna and the sauce mixture, finishing with the sauce.
Cover with tinfoil and place in an oven, preheated to 360 F for 30 minutes.
Sprinkle the cheeses on top and return to oven uncovered for a further ten minutes.

Additional Notes

This recipe is ideal for those who aren't fond of bechamel sauce. But you can easily add a bechamel sauce/cheese mixture before cooking in the oven, if you prefer.
