Toasted Egg Sandwich with Veggies

This quick sandwich recipe will soon become a kid's favorite snack!
Ingredients
  • 1/4 cabbage
  • 1/6 carrot
  • 1/2 onion
  • 4 slices of bread
  • 2 tbsp. butter
  • 2 eggs
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. sugar
  • Sauce:
  • 1/4 apple
  • 1/4 pear
  • 1 kiwi
  • 1/2 tbsp. mayonnaise
  • 1 tbsp. honey
  • 1/2 tsp. parsley
Directions
  1. Slice cabbage, carrot and onion into pieces.
  2. Mix eggs with salt, pepper and sugar.
  3. Combine the vegetables with eggs, salt, pepper, and sugar.
  4. For sauce, use juicer for apple, pear and kiwi.
  5. Add all the ingredients into a blender and blend until smooth.
  6. Butter a frying pan and cook vegetables, eggs, salt, pepper, and sugar and cut it into two pieces.
  7. In the same pan, cook breads to golden brown.
  8. Spread the sauce onto breads and have the egg with vegetables in between two slices of bread and enjoy!
Additional Notes
If you do not have a juicer, blender could be used. However, since the sauce might be too chunky, add some water.
