Fun and Easy Chicken Sticks
Ingredients
10-12 Chicken tenderloins. Tenderloins are white breast meat cut into long slices. So if you have chicken breasts, cut your breasts into long strips and use them in this recipe.
10-12 Sticks
Chicken spicing - anything you like -- I prefer lemon pepper; seasoned salt and garlic powder; or prepared multi-spice chicken rub
In the oven or on the grill, these will entice your family to rediscover chicken.
Directions
If cooking on the grill, fire it up to have it hot enough for when you are ready to cook.
If cooking in the broiler, preheat your broiler to high
Find a heat resistant container tall enough to hold the sticks.
Boil enough water to fill the container and put the sticks in the container.
Let the sticks soak for at least 1/2 an hour to an hour, turning them over once. This is so that the sticks won't immediately catch on fire when exposed to heat. Or, if you are really organized and think out your meals in advance, soak your sticks in cold water overnight or for a couple hours prior to using them.
Once the sticks have soaked long enough, pick up a tenderloin and starting at the wide end, poke the stick thru the thick meaty part of the tenderloin, pushing the stick completely thru the top. Make sure that there are no edges of the meat hang down, especially if grilling, or the edges will get burnt.
Add 1-2 tenderloins per stick.
If cooking on the grill: Place the sticks on the grill and sprinkle the tenderloins with your spices. Cook approximately 5-7 minutes, depending on the thickness of your tenderloins. Turn over and sprinkle the other side of the tenderloins with your spices. Cook for an additional 5-7 minutes until chicken is cooked totally through.
If cooking in the broiler: Place the sticks on a tray and sprinkle the tenderloins with your spices. Turn over and sprinkle your spices on the other side as well. Place under the broiler for approximately 5-7 minutes. Remove from the broiler, turn over and cook for an additional 5 minutes.
When completely cooked, serve with any of your favorite sides. Allow your family to eat the meat directly off the stick and have fun with them.
Additional Notes
These came as an inspiration when I bought the wrong kind of chicken. I was expecting chicken breasts and got chicken tenderloins. So what was I supposed to do with these? Stick them on sticks, give them a new name and serve them to my family. The sticks are just skewers that can be used on the grill for shish kabobs and whatnot. I prefer these chicken sticks cooked out on the grill and will grill all year around. However, I know some people will only grill during the summer months, so if you put your grill away with the summer, cook the chicken sticks in the broiler. Either way, these are fun and delicious. Little kids get a thrill of eating the meat directly off the stick. Pick sides that can be eaten with fingers as well and save on washing silverware for the night.
