Chicken Breast With The Three C's

Ingredients

1 Boneless chicken breast with skin removed (cut into strips)
2 medium sized carrots (chopped thinly)
1/2 can of sweet corn
2 sprigs of cilantro
1 tablespoon of tomato paste
1/2 an onion
1 teaspoon of salt
1 teaspoon of minced garlic
1 tablespoon of olive oil
1/3 cup of water

This unexpected combination dish was created using the remaining food I had in the house one late afternoon. It's become a staple ever since.

Directions

Pour olive oil into a pan. Set pan to medium high.
Sprinkle salt on chicken, and add the chicken to the pan.
Add finely chopped onions and garlic to the contents of the pan.
Quickly stir contents together, and then allow the contents to sit undisturbed for about 2 minutes (still on medium high). Quickly stir the contents again, being sure that chicken has began to brown.
Allow the contents to cook on medium until the chicken is completely done.
Add the tomato paste and water to the contents. Stir contents.
Add the carrots and quickly stir contents together.
Add the corn and once more stir the entire dish, cover the pan and allow contents to cook on medium high for 5 minutes. (Add water if necessary.)
Uncover the pan and add the cilantro. Recover the pan and allow the dish to cook on medium for 5 minutes.
