Shrimp Scampi with Garlic and Scallions

Directions
Quick thaw your frozen shrimp by putting the whole lot in a large bowl and running cold water over it for a few minutes. Turn the water off when the bowl is overflowing.
Allow the shrimp to sit while you finely chop the scallions. Set them aside.
Dump the water from the shrimp and refill the bowl with cold water one more time.
Put enough water in a large pot to cook your pasta. Break the pasta in half and place in the pot.
Place the pot on the stove and turn the heat on to high.
Dump the water from the shrimp bowl and this time peel your shrimp if it has shells. Set aside.
In a large skillet, on a medium high heat, add the butter, garlic and scallions and cook until the butter is bubbling slowly.
Rinse your shrimp one more time and add to the skillet. If some of the shrimp are still a little frozen, that is okay as they will thaw quickly while cooking.
Cook on medium-high heat until the shrimp are a bright pink color and the garlic and scallions are mixed through completely. This should take no more than 5 minutes.

Put the pasta into a large bowl and pour the entire contents of the skillet over the pasta.
Serve very hot.

It's one of those days when you have to run to the grocery store to buy dinner. You don't know what you have at home and a limited amount of time to get dinner done. As you run through the store, you see frozen shrimp on sale. Your family loves shrimp, so let's go with that. You now run to the pasta aisle and buy your family's favorite angel hair pasta. You think hard, do you have butter or margarine, ummm, don't know, so run and get butter. Garlic, yes, that you do have at home. As you run through the fresh produce section, you see some fabulous looking scallions. You skid to a stop and grab a bunch of those. Fifteen minutes and you're in the checkout counter. And since you only have four items, it's the express lane. A couple of minutes home; a quick "Hi" to the family; and you're cooking. Thirty minutes later, you call the kids to set the table and get drinks and you are done. Everyone sits down and gobbles down your Shrimp Scampi, telling you what a wonderful cook you are. Fifteen minutes later, with your family happily fed, you are on your way to the next important task in your life.
You can also use pre-cooked shrimp. If you do, however, only cook the shrimp 2-3 minutes until they are completely hot.
