Carey's Italian Wedding Soup
Ingredients
1/2 lb ground beef
Italian seasoned bread crumbs
2 eggs
1 carrot chopped finely
1 celery stick chopped finely
Salt and pepper to taste
4 chicken flavored boullion cubes
3 cups water
16 ounces of frozen spinach
1/4 cup cous cous, small or large
1/2 cup parmesan cheese
1 clove garlic finely chopped
This is quick way to have that specialty soup and it freezes well.
Directions
In a small mixing bowl, mix the ground beef with eggs and bread crumbs, add additional salt, pepper, and one finely chopped garlic clove
Cook the meatballs for 30 minutes
In a large pot, cook two small pieces of skinless boneless chicken with boullion cube, celery, carrots, salt, pepper, and water unitl chicken is tender
Remove the chicken, add spinach and small meatballs and cous cous
Cook for 15-30 minutes more
Serve with parmesan cheese sprinkled on top
Additional Notes
Can substitute small meatballs with small cubed chicken pieces
